Sunday was our first full day alone on the mountain, and the house was eerily quiet without the pitter patter of little feet and the music of children’s voices! We spent a restful morning just sitting around doing nothing in particular. While perusing the internet, Kim found some interesting fitness equipment called Kangaroo shoes. She got so excited about them that we spent quite some time watching Kangoo shoes videos and reading reviews. I was not as thrilled with the idea and kept reminding her that it’s about 45 minutes to the nearest hospital from here, but she was undeterred. I will post a link to the funniest video about these shoes in the comments. More to come on this subject!
We ate our lunch outside and enjoyed the hummingbirds and the cool sunny day, then decided we’d take a walk down our street. Sadly, since we are at the top of the hill, that means the toughest part of the walk is the climb home! But we walked all the way to the end and saw 6 of the 8 homes (including ours) that have been built here. We ran into our opposite end of the street neighbors as they were heading back to Charlotte for the work week. We stopped to photograph butterflies, bees, wildflowers, trees, and mushrooms (always the mushrooms!). We had worked up a sweat by the time we made it back up the hill, but Crockett could have kept going, I’m sure.
We decided to have pizza night on Sunday this week, but since it was too hot for the Tulikivi, we just used the regular oven. But, I did make homemade crust (easy and VERY tasty recipe, which I’ll post later). Kim’s half had sausage, onions, and spinach and mine was sausage, onions, and red peppers. So good. We could have eaten the whole thing, but we each saved a piece for tomorrow’s lunch.
My Durham friend Mary Pickard has been posting delicious sounding and beautiful looking cocktail recipes during the pandemic, and she had posted a really good sounding peach and mint concoction recently. Hers had rum, but since Kim doesn’t do rum (long story involving an evening of too much rum long ago), I made them with some Deep Eddy Peach vodka and some Titos. I’m thinking the recipe might have been for a crowd, but we enjoyed it!
Since it was Sunday, we treated ourselves to chocolate sundaes later in the evening. Mmm, mmm, good!
Oh, and Kim ordered the Kangoo shoes…..
